Did you receive the latest issue of Food Network Magazine? It has some pretty great recipes this month and many of them are super easy to make too. This Chicken and Quinoa Soup is like a lighter version to your comforting Chicken Noodle Soup. The flavor in this soup is wonderful, so give it a go.
Saute your veggies and seasoning together to release some of that sweet flavor from those carrots and soften your celery a little.
Quinoa has gained widespread popularity because of it's protein and fiber content as well as a good source for magnesium, iron, and even calcium. If you have texture issues this quinoa may not be your thing. Most of my kids could take it or leave it. David loves the "funny beans" while Rebecca says, "they feel weird in my mouth."
Once your veggies have softened, but are still a little crunchy throw in your quinoa. Stir it all around a bit.
Then add broth and simmer for a while. Next, you'll add chicken, (and broccoli, which I omitted since I didn't have any), and heat until warm throughout the whole soup.
Once the soup's warm you should eat it immediately. There's nothing like a hot soup on a cold day. Let your Lutheran Stud pose for a photo while you take a few food photos. It will make him feel like he's helping rather than getting in the way.
