High Altitude Zucchini Bread

Zuc1
We have had an abundance of zucchini coming out of our garden.  Zucchini bread is always a hit in our house and when you add some chocolate chips to them it’s a definite winner!  So, Jennifer, here is the recipe you requested.  Let me know how it turns out.  :)
Zucchini Bread:
Ingredients:
  • 1 3/4 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 3 large eggs
  • 1 1/2 cup sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 cup shredded zucchini
  • Optional: walnuts, pecans, chocolate chips, etc.
Preheat oven to 350 degrees.  Grease the bottom of a 9x5 loaf pan. In a bowl combine flour, salt, baking soda, baking powder, and cinnamon.  In a separate mixing bowl beat eggs, oil, and sugar until light and fluffy.  Add vanilla and zucchini.  Mix on low speed for about 30 seconds, or by hand with about 30 strokes.  Mix flour mixture into egg mixture on low speed for about 30 seconds or about 30 strokes by hand. At this point you may add the optional ingredients by folding it into the batter. Pour batter into pan.  Bake for 65-70 minutes or until a toothpick comes out clean when inserted into bread.  Remove bread from oven and cool in pan for 10 minutes.  Remove bread from pan and finish cooling on rack.  Enjoy!

Garden

We just harvested our first tomato at our new house!  It even looks like we'll have quite a few more.  This is pretty exciting for me because the last time I tried to grow tomatoes they were picked or eaten before we got to them.  We did have one incident this year.  One of the children brought a green tomato to me.  It had "fallen" on the ground.    Nobody would confess, so we can only guess what happened...

So far we also have a little zucchini growing.  We'll see if we get anymore.  That's about it in our garden this year.  If all goes well this year, maybe next year we'll plant a few more crops.  I am beginning to think that my brown thumb is starting to turn green, or maybe Jared has done a good job watering.  :)
