My family likes to drink eggnog during the holidays. I wouldn't miss it if we didn't have any in the house. I love cupcakes though, so why not make cupcakes with the eggnog?
I thought it was a terrific idea, so I did. They were such a hit that I ended up making them three times before Christmas. I think I like eggnog now. . . in a cupcake. If you're an eggnog fan, I guarantee you will enjoy these cupcakes. Is eggnog even available anymore? Good luck finding some.
Eggnog Cupcakes
Yield: approximately 30 cupcakes
Ingredients
Cupcakes:
- 1 cup butter
- 2 cups sugar
- 4 large eggs
- 3 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- 2 cups eggnog
Frosting:
- 1 cup butter, softened
- 5 cups powdered sugar
- 6 teaspoons eggnog
- 1/4 teaspoon cinnamon
- More cinnamon for garnish (optional)
Directions
Preheat oven to 350˚F. Line cupcake pans with cupcake liners.
In a medium mixing bowl combine flour, baking powder, baking soda, salt, and nutmeg.
In a mixing bowl beat butter and sugar until light and fluffy. Add eggs, one at a time, until just combined, scraping down sides of bowl.
Add 1/3 of the flour mixture until just combined. Then add 1/3 of the eggnog. Repeat, alternating dry and wet ingredients.
Divide batter equally between cupcake liners. Bake cupcakes for 20-24 minutes, until a toothpick comes out clean. Transfer cupcake to wired rack to cool.
Meanwhile to make frosting beat butter until smooth. Slowly add powdered sugar, half a cup at a time. Add cinnamon. Then add eggnog 1 teaspoon at a time until frosting is smooth. Frost cupcakes when cooled. Garnish with cinnamon if desired.
