Thomas' birthday was a day filled with anticipation and excitment. The boy was so happy bouncing off the walls all day long.
Dad finally made it home and he got to open some gifts. He's loves to build things, so we thought the little Legos would suit him well. He hasn't stopped playing with them since he opened them.
He requested S'mores cupcakes for his birthday with an extra big cupcake for himself. His little cake there is equal to 3 cupcakes in a coffee filter as the wrapper.
He even helped make these amazing cupcakes. You can find the S'mores recipe
here. They are defintitely a favorite around here.
Then with the extra frosting from the cupcakes I made meringue cookies. They were super easy. Just pipe the "frosting" onto cookie sheets in cute little shapes. Then preheat your oven to 325˚F. Bake for 15 minutes. Then shut the oven off leaving the cookies inside for 30 minutes. Voilá. These are light and fluffy cookies. You will love them. Thomas sure loved the extra sweet treats. He's our little sweet tooth around here.
