Okay, back to this awesome soup. Cook up your onions add the milk and cream. Then throw in some flour. Cook that up until it boils or thickens up quite a bit. Then throw everything in a crockpot and let everything simmer all day long. Yum! The flavors will just melt together and you'll have this fantastic soup.
I guess you could kind of call it a chowder. It's incredibly thick and creamy. Add cheese, sour cream, and my favorite, green chiles, for a little kick! Mmmm! Enjoy.
Baked Potato Soup with BaconIngredients:
- 8 strips of bacon chopped, browned
- 5 tbsp Bacon fat (or vegetable oil)
- 1 cup Onion, chopped
- 1/2 cup Flour
- 2 cups heavy cream
- 4 cups milk
- 3/4 tsp kosher salt
- 8 medium Yukon Gold or Russet potatoes, diced
- 1 cup Sharp cheddar cheese, shredded
- 3 Green onions, sliced
- 4 tbsp Light sour cream
- Roasted green chile (optional)
1. Chop bacon strips into 1/2 inch pieces. Cook bacon pieces over medium to medium high heat, depending on your stove, until evenly browned. Drain bacon pieces and reserve fat.
2. Dice potatoes. Set aside.
3. Cook onions in bacon fat over medium high heat until onions are tender
4. Stir in flour and cook for about 3 minutes
5. Add milk and salt. Turn heat down to medium low and stir.
6. Add potatoes to crockpot.
7. Pour milk/cream mixture over potatoes.
8. Cook on low 6-8 hours.
9. Top each serving with green onion or green chile, cheese, bacon and sour cream.

After reading about that monstrosity of a trial, I think I need a vat of this to calm my nerves. Wait. This qualifies as comfort food, right?
