Chipotle Chicken Bowl

CHip7Do you have a Chipotle near you? Here in Denver, Chipotle is quite a popular place to dine. I had been there a while back with some friends and we were discussing how to make their food at home. A friend told me about a web site that shared this recipe. I have since lost that site, so Jennifer if you remember let me know! If you are not familiar with Chipotle it is what I would call a Mexican fast food joint, but with fresh, healthy ingredients…except for one thing: I’ve heard that the massive tortillas that they use are high in fat. An alternative that I know people order is a burrito bowl. I wanted to try it at home and all it takes is is 5 things. Ready?

Let’s begin by preparing the chicken. Mix together chili powder, garlic salt, onion powder, cumin, and oregano. Grab some chicken breasts and sprinkle spices on them. Then bake or fry them in a pan. It’s your choice. Whatever you prefer.

Next we are going to make salsa or what is more commonly known as pico de gallo. It’s just diced tomatoes, onions, garlic, chopped cilantro, lime, and salt and pepper. Pretty isn’t it?

Now you can either make your own black beans, which I cook on low all day in the crock pot, or buy can of black beans. Rinse and drain them. Then heat them in chicken broth and spices listed above. It’s a great flavor.

What I really love from Chipotle is their cilantro lime rice (and guacamole). To make the rice I just use jasmine rice, brown rice works well too. Then mix rice with melted butter and squeeze lime juice over it. Mix well.
CHip8 Lastly, grab you’re bowl and layer your ingredients. Start with rice, then beans, chicken pico de gallo, and then sprinkle colby jack cheese over the top.
 Chipotle Chicken Bowl
Five easy ingredients:
Chicken
Cook chicken breasts in a skillet seasoned with:
Chili Powder
Garlic Salt
Onion Powder
Cumin
Oregano
Rice
Cook jasmine or brown rice according to package directions. When done, add:
Butter
Salt
Juice of a lime
Chopped cilantro
 Beans
In a microwave safe bowl, heat up 1 can drained and rinsed black beans with:
Chicken broth 
Dashes of chili powder, cumin, oregano & cayenne pepper
Pico de Gallo
Diced Tomatoes
Garlic clove
Diced onion
Chopped cilantro
Salt and Pepper
Lime Juice
Colby Jack Cheese
Shredded
