BLT Salad

Salad18Who wouldn’t love a salad that included bacon? Salad Sometimes I like to cook bacon in the oven.  There’s no splattery mess and you can just stick it in the oven and set the timer. Salad5However, when you pull it out, you’ll want to soak up all the grease with paper towels or something similar.Salad2  While you’re cooking your bacon, pull out your baguette.  Slice it up.  Salad4Then cut it into cubes.  We’re going to make our own croutons.  They taste better and they are probably cheaper than those boxes in the store.   Salad13I love buttery croutons, so melt some butter in a pan.Salad14Then add your cubes of bread and start toasting!Salad15Add any herbs and spice that you like.  I love garlic, so I threw in some garlic powder.Salad6Next we’ll make our salad dressing.  Get out your measuring cup and pour some buttermilk into it.Salad7Add a little apple cider vinegar.  That’s what will give out dressing a little zing. Salad8The mayo will make smooth and thick. Salad9 Then add some green onions for some more flavor.

Salad10Mix it up well.  Easy peasy salad dressing, don’t you think. Salad11 Take your lettuce and cut it up any way you like.

Salad12    Then cut up your tomatoes.Salad16Put it all into a bowl.  Toss it together. Salad17

Drizzle your dressing over the top and toss it gently to coat.Salad20Give it a taste and enjoy.  Mmm…

BLT Salad

  • 8 slices of bacon
  • half a baguette or small whole baguette
  • 2 Tablespoons olive oil
  • salt and pepper
  • 1/3 cup buttermilk
  • 3 Tablespoons mayonnaise
  • 2 Tablespoons apple cider vinegar
  • 1 green onion
  • 1 lb romaine lettuce
  • 1 pint cherry tomatoes

Preheat oven to 375 degrees.  Arrange bacon in a single layer on a baking sheet that is rimmed.  Bake for 15 min.

Cut baguette into small cubes.  Toss with olive oil or butter.   Add herbs or spices.

In a large bowl whisk together buttermilk, mayonnaise, vinegar, and green onions.  Season with salt and pepper.  Add lettuce, tomatoes, and croutons.  Toss to coat and enjoy.

  2. Did you really put that many tomatoes in there 'cause that is gross :) But the rest of it looks great! Is this the recipe from Lauren and originally from DeAnn?

    It is nice to see you writing about something other than puking kids and husbands though.

  3. Lauren, you're so funny. I never even noticed that. No clue. It's organic though, so you never know about some of those organic things. :)

    Kellee, I think I just figured out our lunch for the next time we get together. Perfect! I'll bring the BLT salad full of tomatoes.

  4. Oh Jan, you always make me so hungry! (except when the kids are puking). :)

    I have never made my own croutons or cooked bacon in the oven. I'm going to have to give it a shot.

  5. I often click on links I have found thru iheartfaces to see new pictures, but now I think I have a dinner idea for tomorrow night. I love the photos...I need all the help I can get in the kitchen!
