Cranberry Pineapple Relish

CSauce6 When it comes to cranberry sauce I’m not a huge fan.  It makes me think of that jelly stuff in a can and that’s not appetizing to me at all.  If you’re like me then fresh cranberries are the way to go.  I actually really like this recipe.  It’s perfectly sweet and tart at the same time.Cranberry1It takes almost nothing to make.  All the ingredients are readily available.  Cranberries, sugar, lemon, crushed pineapple, and nutmeg is all you need.CSauceBegin straining the crushed pineapple.  Then pour the juice with a little water, into a sauce pan.  Add the cranberries to the pan and turn up the heat baby!CSauce1Then add sugar.  That’s the sweetness part of all this incase you couldn’t tell.  The cranberries are the tart part.  Stir the mixture until the sugar is dissolved.CSauce2As the sugar and cranberries mesh together the juice from the cranberries start oozing out.  Isn’t that pretty?  Keep cooking at a boil and the berries will begin popping.  It’s fun to listen to. CSauce3Once the cranberries have cooked down and thickened up remove the pan from heat.  Add the crushed pineapples, fresh lemon juice, and nutmeg.  That’s it.  Easy right?CSauce4

Cranberry Pineapple Relish

  • 20 ounce can of crushed pineapple
  • 6 cups fresh cranberries
  • 1 1/4 cup sugar
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon ground nutmeg

Drain pineapple.  Save juice and add enough water to equal 2 cups.  Put juice in sauce pan.  Add cranberries and sugar.  Stir mixture on high heat until the sugar dissolves and the liquid comes to a boil.  Continue cooking it at a boil, stirring occasionally, until most of the berries have popped and the mixture is thick.  This should take about 10 minutes.  Turn off the burner.  Mix in the pineapple, lemon juice, and nutmeg.  Put it in a serving bowl.  Then into to the fridge to cool.  Makes 6 cups.

CSauce5I adapted this recipe from a recipe in Family Fun magazine.  When I made this I actually cut it in half.  It was more than enough for everyone.  Come back later for some more of our Thanksgiving recipes.  This is all the stuff I usually make for Christmas too, so maybe it will help you plan your Christmas dinner.  Until next time…

  1. Wow, Jan... you have entirely too much free time on your hands. I think you need to have another baby to help keep you busy! I love seeing your blog and hearing of your adventures and maybe if I ever get some free time I'll give one of the recipes a try :) Miss you and hope you're well.

  3. Brenda, you are too funny! Once those babies start feeding themselves you'll have all the time in the world. Ha! Just stick them in bumbo seats and they can watch. That's what I do with Anna. Miss you too.

    Kellee, you can eat it both ways. Some people just at it alone and some put it on their turkey. I made turkey sandwiches with our leftovers and this sauce was really good on top. Make it for Christmas!
