Pizza On the Grill

_MG_9698.jpgWe love pizza in this family. We also love making pizza. We used to make it at least once a week. I think we've finally got this crust recipe perfected.
_MG_8803.jpgWhen cooking pizza on the grill I've learned that you should cook the crust for a few minutes before putting toppings and all of that goodness on top. That way the crust is a bit stiff and can handle the weight of the toppings and cheese. I usually grill one side for a few minutes, then pull off the grill.
20100831_0032.jpgThe kids are waiting excitedly to put toppings on the pizzas. I've also found that the crust is usually less soggy if you just use straight tomatoes for your sauce instead of a traditional sauce.
_MG_8806.jpgWe usually double the recipe below and make four pizzas. That gives the older children a chance to make their own pizzas. :)
20100831_0031.jpgWhy is this so fun? Who knows? All of our children just seem to love making pizza. This is one of my favorites. It's a Margherita pizza. I love being able to grow all of the ingredients.

_MG_7458.jpgStick those pizzas on the grill for about 7 minutes or until the crust is crispy.
_MG_9696.jpgLet the pizzas cool for a few minutes and then slice away! This has become our favorite crust in the summer. It takes almost no planning because the does doesn't require time to rise. Nice, huh? Try it. I hope you'll love it as much as we do.

Thin Crust Pizza Dough
Makes 2-12inch crusts

Ingredients:
3/4 cup water
2 cups of flour
1/2 teaspoon yeast
1/2 teaspoon salt

In a small bowl mix warm water with yeast. Set aside for a few minutes. 

In a large mixing bowl add flour and salt. Make a well in the center of the flour. Add water/yeast mixture. Knead dough until slightly tacky. Divide dough into two round balls. 

Preheat grill to high. Cut two pieces of parchment paper about 12 inches wide. Roll dough out on parchment paper; about 1/4 inch thick. Place dough directly on grill. Peel parchment paper off. Cook crust for about 5 minutes. Remove.

Place crust back on parchment paper with grilled side up. Spread sauce onto crust. Add toppings and cheese. Slide pizza back on grill. Grill for about 7 minutes. 

Remove from grill. Let rest for about 5 minutes. Slice pizza and enjoy.

Is this a crust I would be able to handle? I mean, let's be honest: I was fighting with clarified butter yesterday so . . .

You can handle this Adriane. You can even cook this in the oven at 475˚F.

I am going to have to try this. My kids would LOVE making their own pizzas. Looks nice and easy, but very good too!! Thanks for the recipe!
