Bleu Cheese Buffalo Chicken Dip

Wow!  That’s all I had to say when I had this dip.  Now if you aren’t into buffalo chicken then you don’t need to keep reading.  On the other hand, if you love that sort of thing you have to make this.Chicken16 When Jane first wrote about this recipe my mouth just started watering right away.  I knew I was going to have to try it.  It just sounded so good.  What better time for this dip than for the Super Bowl.   (I know.  I should have posted this before, but I hadn’t made it yet.)  So here we go…

This recipe doesn’t require many ingredients.  That makes me even more willing to make this.

Melt your butter. Then mix in your hot sauce.  The smell is already making my stomach rumble.  Sadly, I kind of want to just lick the bowl now.
Chicken2 Add your chicken.  Mix it well.  Then set it aside and let the sauce and chicken marinate and become one. 
Chicken4I really just want to steal a small piece of chicken right now.  I shouldn’t, so I am just going to wait.  Although I strongly believe in tasting as you go…Chicken6Now grab another bowl and dump your cream cheese into it.Chicken7For this next step the cream cheese and the bleu cheese dressing become good friends.   Chicken8Go ahead and mix them together.  It’ll taste incredible.  Trust me.Chicken9Now this is where I decided to change things up.  Instead of putting this into one dish, I made five different small servings.  I brought this to a friend’s house for the Super Bowl and wanted to keep one at home for later.  I’m selfish like that.  :)  Anyways, scoop your cream cheese/bleu cheese mixture into a dish and spread it out.
Chicken10 Top the mixture with that gorgeous chicken, soaked in butter and hot sauce.Chicken11Then sprinkle with cheese and stick it in the oven for 25 minutes. 
Chicken12 While all of that is baking, cut up your celery into beautiful little sticks.  You can munch on a few, but you should really eat it with the dip when it’s ready.Chicken13 Have you ever seen anything so incredibly pleasing to so many of your senses? Smell, taste, touch, sight?  Okay maybe not the hearing, but you get what I mean.Chicken18 Now go ahead and plunge that celery stick into the dip.  It’s waiting.

Bleu Cheese Buffalo Chicken Dip
  • 3 cups chicken, cooked and shredded
  • 1 cup Frank’s Red Hot Sauce
  • 1 Tablespoon butter, melted
  • 2 blocks Light Cream Cheese
  • 1 jar Marie’s Blue Cheese Dressing
  • 2 cups Cheddar cheese, shredded
Mix melted butter and hot sauce. Add chicken.  Toss to coat well.  In another bowl mix the cream cheese and blue cheese dressing.  Spread into a 9x13 pan.  Top with chicken.  Sprinkle with cheese.  Bake at 350 degrees for 25 minutes.  Serve with celery sticks and chips.  Mmmm…..

I love the idea of serving it in smaller bowls. (And I always have to keep a little back when I take it somewhere!)
