Winner, Winner Chicken Dinner

When it comes to cooking, I’m all about things that are quick, easy, and flavorful.  Sometimes I pull things together at the last minute.  This was one of those times.  I searched the fridge to see what I had laying around.  Here is what I came up with.ChickenGrab some chicken breasts.  Pound them down a little, so they don’t take too long to cook. Sprinkle some salt and pepper on both sides.  Then pull out you skillet.  Add a little oil.  (Or you can grill them.  In the summer I stick these on the grill.)Chicken1Cook the chicken until it’s brown on both sides, flipping the chicken once during the process.  What I like about doing this in the skillet is the nice, caramel crust that forms on the outside.  Yum!Chicken2Pretty, right?  Remove the chicken from the skillet and place it on an oven safe platter or dish. Chicken3Now grab some cheese.  Just about any kind will do.  I think I used Colby Jack here. Sprinkle it over the chicken.Chicken4Is your mouth watering yet?  Remember that incredible salsa you made with all the tomatoes you bought?  Go and get a jar. Chicken5Dump a few spoonfuls over the cheese that you put on your chicken.  Chicken6You taste buds are getting jealous now.  Chicken7Your stomach is starting to rumble.  But wait.  You need to stick this into the oven at 350 degrees for 15-20 minutes.Chicken8When you pull the chicken out of the oven the aroma from the salsa of onions, tomatoes, garlic, and cilantro will overwhelm you.  You’ll just want to eat it straight off the platter.  Chicken9

It’s not dinner time yet, but now you have your dinner planned out.  Enjoy.  Try it and let me know what you think.

Cheesy Salsa Chicken

Ingredients:

  • 4-6 Chicken Breasts
  • Salt
  • Pepper
  • Cooking oil
  • 2-3 cups of shredded cheese
  • Jar of salsa

Preheat oven to 350 degrees. 
Pound chicken breasts down to 1/4 inch thick.  Sprinkle with salt and pepper.  Heat oil in skillet.  Brown chicken on both sides.  Remove chicken and place on oven safe platter.  Sprinkle cheese on each chicken breast.  Then spoon salsa on top.  Bake in oven for 15-20 minutes.

I'm just now seeing this, we do this with steak all the time! First we marinate it for a few hours in worcestershire sauce, then do this exactly--with the cheese & salsa!

It's delicious. I'll try this now with chicken, you try it with steak!

Our favorite is the petite sirloin at the meat counter at Kings. :)

Oh! That reminds me, I keep forgetting to tell you, in case you aren't aware. Our King Sooper's has blinkie coupons on their Breeze Almond milk this week for 55 cents off. They double the coupon to $1 off, and also the almond milk is on sale right now for 1.95. So they are only 95 cents when you use the coupon!
